Slow Cooker Apricot Chicken

It is cold at the moment and I am ALL about the slow cooker life! I have also recently started working so coming home to the yummy smell of dinner already cooked is my version of winning! BUT I completely understand that the morning hustle is real and getting the time to cut up all of the ingredients and precook the meat can be timely and an inefficient way to start your day, especially if you are attempting to get children ready when all they want to do is run around the house naked. So meet my ridiculously easy Apricot Chicken! It’s so 80s that it’s cool.

Ingredients

  • 8 chicken skinless thighs

  • 2 cups chicken stock

  • 1 sachet of french onion soup mix

  • 1 tin of apricot halves

  • 1 tin of apricot nectar

  • 2 bay leaves

  • Rice to serve

Method

  • Throw all of the above in the slow cooker minus the rice

  • Cook on low for 6 hours

  • Serve with the rice

Done. That is actually it! I hope you enjoy this no fuss, easy dinner!
