Dairy Free Apple Cinnamon Muffins

These are super yummy muffins for me and my daughter. It is great to have a snack we can share being dairy free. They do however have almond milk so I wouldn't suggest putting them in lunch boxes in case of friends with allergies. 

Ingredients:
3/4 cup white flour
3/4 cup whole wheat flour
1/2 cup brown sugar
1/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/3 teaspoon nutmeg
1/3 cup of melted nutalex
1 egg
1/3 cup almond milk
2 apples, peeled, cored and chopped

Streusel topping:
1/2 cup brown sugar
1/2 cup all purpose flour
1/3 cup of nutalex
1 1/2 teaspoon ground cinnamon

Method:
reheat oven to 180º C. 
Prepare muffin tray- which ever you prefer, using liners or oil. 
Whisk together all dry ingredients in a large mixing bowl. 
Combine egg, nutalex and almond milk then add to the dry ingredients. Mix until well combined. 
Add in chopped apple pieces and combine. 
Divide batter evenly and add to muffin tray.

Add all of the streusel topping ingredients together in a medium bowl and, using a fork, combine making a crumbly mixture. (It helps if the nutalex is cold). 

Top the muffin batter with the streusel mixture and bake for 15-20 minutes or until golden brown and cooked through. 
Allow to cool before serving.
