Do you ever feel like you barely have enough time to eat a healthy lunch? Between playing with my daughter, breast feeding the baby and the endless pile of washing, cleaning and cooking, my new favourite thing to do is soup in a mug. Portable enough that I can take it from room to room and sip away whilst also knowing that everything in it is good for me (and therefore good for my baby). I am unable to eat dairy at the moment because my baby doesn't tolerate it very well, so I am on the hunt for dairy-free goodness and this hits the spot every time.
I have so many issues getting different fruits and vegetables into my 2 year old. She is incredibly fussy (as I've mentioned before), and I am constantly trying new ways to get her to try different textures and flavours. Although she won't eat strawberries, she will eat these strawberry muffins which have real strawberry pieces in them. So it's a little win for me. Plus they are dairy free so I can eat them with her.
Ever since my littlest was born she had tummy issues due to an immature gut and the inability to digest cows milk protein. As I am breast feeding I have had to cut out all dairy (along with other things) in my diet. It's only since cutting out dairy that I have realised how much I love it! I have been trying different recipes to give me some variety whilst also trying to find meals my toddler can enjoy as well. This is a collaboration of a few different recipes that I have found and it seems to satisfy those dairy cravings for me.
